Whilst written originally for the 3G - it works for all models of the iPhone - the same is true for the iPod Touch. Although I have not tested - it'll work for iPad too... Anyway here's how to do a force shut-down of it.
The iPhone is a bit glitchy and tends to lock up (especially when the battery is low or you disconnect during a sync with iTunes)
If something does happen (such as key strokes not accepted, and you can't power off by pressing and holding the power-off button) then you either have to:
- drain the battery ((lengthy and not great if as me you may have to do something such as get on a plane!))
- do a force power down; a 'hard reset; - like on any computer, iPod etc.
Image above shows keystrokes not being registered

To force shutdown / hard reset:
- press and hold the top right button (for locking/unlocking)
- also press the big button at the bottom of the screen -
- hold them down for between 5 - 10 seconds.
- your phone will just switch off
Turn back on as normal and it should work normally!
Hope this helps anybody out there who had problems with their iPhones screwing up like this
